Almond Croissant Cookies

Ingredients

Cookies

— 1/3 cup butter

— 1/4 cup brown sugar

— 1 egg

— 1/2 cup maple syrup

— 1 tsp vanilla essence

— 1 tsp almond essence

— 2 cups almond flour

— 3/4 cup plain flour

— 1/4 tsp baking powder

Almond Paste

— 1/4 cup almond butter

— 1 tsp almond essence

— 2 tbsp maple syrup

Honey Almonds

1/4 cup honey

1 cup flaked almonds

Method

  1. Preheat the oven to 170°C and line a few baking trays with baking paper.
  2. Using an electric mixer, cream the butter and brown sugar together until smooth and slightly fluffy. Add the egg, maple syrup, vanilla essence, and almond essence, mixing until well combined. Fold through the almond flour, plain flour, and baking powder to form a soft cookie dough.
  3. In a separate bowl, mix together the almond paste ingredients until smooth. Add this to the cookie dough and gently mix for a few seconds only, just enough to marble it throughout the dough.
  4. Roll the dough into evenly sized balls and place onto the prepared trays. Gently press each one down to form a thick cookie shape.
  5. Combine the honey and flaked almonds in a small bowl, then spoon a generous layer over the top of each cookie, pressing lightly so it adheres.
  6. Bake for 10-15 minutes, or until the cookies are lightly golden on top.
  7. Remove from the oven and allow to cool on the trays before finishing with a light dusting of icing sugar.
