Apple and Walnut Bundt Cake

Ingredients

Caramelised apples

—2 apples, chopped

—3 tbsp maple syrup

—1 tsp cinnamon

Cake

—3 cups almond flour

—1 1/2 cup self raising

—1/2 tsp baking powder

—1/2 cup caster sugar

—2 tsp ground cinnamon

—1/3 cup maple syrup

—1 tsp vanilla

—3/4 cup coconut oil, melted

—3 eggs

—3/4 cup milk of choice

—1/2 cup Walnuts

Cinnamon swirl (optional)

—2 tbsp Maple

—1 tbsp cinnamon

Method

Caramelised apples

  1. In a small saucepan over medium-high heat, combine the chopped apples, maple syrup, and cinnamon. 
  2. Cook for 5-10 minutes, stirring occasionally, until the apples are softened and lightly caramelised. Remove from heat and set aside.

Cake

  1. Preheat the oven to 180°C and grease and flour your bundt tin (or preferred cake tin).
  2. In one bowl, combine all dry ingredients. In another, whisk together the wet ingredients. Mix wet into dry to form a smooth batter.
  3. Fold in the walnuts and caramelised apples. Pour half of the batter into the prepared tin. Optional: mix the maple syrup and cinnamon to create a cinnamon paste and drizzle over the batter. Pour the remaining batter on top.
  4. Bake for 50-60 minutes, or until the cake is risen, golden, and a skewer inserted comes out clean. Remove from the oven and allow to cool completely in the tin.
  5. Once cooled, remove from the tin and finish with a dusting of icing sugar or a light icing sugar glaze.
