Apple Pastry Turnovers

Serves: 4 large triangles

—2 apples, diced

—1 tbsp coconut sugar (or brown sugar)

—4 tbsp Maple syrup

—1 tsp Cinnamon

—1 sheet Puff pastry

—1 Egg, for egg wash

—Demerara sugar, to sprinkle

Method

  1. Preheat the oven to 180°C and line a baking tray with baking paper.
  2. Add the diced apples to a saucepan over medium–high heat. Stir through the coconut sugar, maple syrup and cinnamon until evenly combined.
  3. Cook for 5 - 7 minutes, stirring occasionally, until the apples are softened and lightly caramelised. Remove from the heat and allow to cool slightly.
  4. Cut the puff pastry into 4 even squares. Spoon approximately 2 tablespoons of the apple mixture into the centre of each square.
  5. Fold one corner over to the opposite corner to form a triangle. Press the edges firmly together, then seal using the back of a fork.
  6. Lightly whisk the egg and brush each pastry with egg wash. Sprinkle generously with Demerara sugar.
  7. Bake for approximately 15 minutes, or until the pastries are puffed, crisp and deep golden.
  8. Remove from the oven and serve warm - perfect with a scoop of ice cream!
