Banana Bread Donuts

Ingredients

—1 cup almond flour

—1 cup self raising flour

—1/2 tsp baking powder

—1/4 cup coconut sugar

—2 ripe bananas

—2 eggs

—1/2 cup maple syrup

—1/3 cup coconut oil, melted

—1 tsp vanilla essence

Frosting

—200g cream cheese

—3 tbsp maple syrup

—1 tsp vanilla essence

Method

1.Pre heat oven to 170°C and grease a donut tray

2. Combine dry ingredients in one bowl. In another bowl, mash your bananas and mix in remaining wet ingredients.

3.Add wet mixture to the dry & combine to form a batter.

4.Place batter into a piping bag and fill each donut mould 3/4 full (to allow room for rising as they bake)

5. Place in the oven for 8-10 minutes and remove once risen & golden. Allow to cool completely before removing from the donut tray and frosting.

Frosting

7. Whisk cream cheese, maple syrup and vanilla together using an electric mixer on high speed.

8.Cover each donut in a generous layer of frosting and a light sprinkle of cinnamon.
