Banana Pudding

Ingredients

— 500g pot set vanilla yogurt
— 1 x 320g tin sweetened condensed oat milk
— 5 ripe bananas
— approx. 20 Savoiardi (ladyfinger) biscuits

Method

  1. In a large bowl, combine the vanilla yogurt and sweetened condensed oat milk, mixing until smooth and fully incorporated.
  2. Slice the bananas and roughly chop the Savoiardi biscuits. Fold about ¾ of both into the yogurt mixture, reserving the remaining portion for layering on top.
  3. Spread half of the mixture into a serving dish. Add a layer of scattered banana slices and a sprinkle of biscuits, then top with the remaining yogurt mixture. Finish with the reserved bananas and biscuits.
  4. Refrigerate for about 1 hour, or until lightly set. Slice, serve chilled, and enjoy!
