Cacio e Pepe Nuts

Serves: approx. 10-12 

Ingredients

— 2 cups mixed nuts
— 1 tbsp melted butter
— 1/2 cup grated Parmigiano-Reggiano
— 1 tbsp black pepper (adjust to taste)

Method

  1. Preheat the oven to 180°C and line a baking tray with baking paper.
  2. In a bowl, combine the nuts, melted butter, grated Parmigiano-Reggiano, and black pepper. Stir well to ensure all the nuts are evenly coated.
  3. Spread the coated nuts in a single layer on the prepared tray.
  4. Bake for 15-20 minutes, or until the nuts are golden and the cheese has melted slightly. Keep an eye on them to prevent burning.
  5. Remove from the oven and allow the nuts to cool completely. They will harden as they cool, making them crunchy!
