Cheesecake Brownies

Ingredients

Brownie layer

—1/4 cup coconut oil

—1/2 cup choc chips

—1/3 cup plain flour

—1/2 cup almond flour

—2 tbsp cocoa powder

—1/3 cup maple syrup

—1 egg

—1 tsp vanilla essence

—2 tsp ground coffee (dissolved with 1 tbsp hot water)

Cheesecake layer

—250g light cream cheese

—100g Greek yoghurt

—3 tbsp maple syrup

—1 egg

—Vanilla essence

—5 tbsp plain flour

Method

  1. Preheat oven to 180°C and line an 8×8 inch (20×20 cm) baking dish with baking paper.

Brownie Layer

  1. In a small saucepan over medium heat, melt the coconut oil and chocolate chips together until smooth.
  2. In a mixing bowl, combine the plain flour, almond flour, cocoa powder, maple syrup, egg, vanilla essence, dissolved coffee, and melted chocolate. Mix until well combined and set aside.

Cheesecake Layer

  1. In a separate bowl, beat together the cream cheese, Greek yoghurt, maple syrup, egg, vanilla essence, and plain flour until smooth and creamy.
  2. Pour three-quarters of the brownie batter into the prepared dish and spread evenly.
  3. Spoon the cheesecake mixture on top, then swirl through the remaining brownie batter for a marbled effect.
  4. Bake for 20 minutes, or until the cheesecake layer is set and lightly golden at the edges (the center should still jiggle slightly).
  5. Allow to cool completely in the pan before slicing. Serve and enjoy!
