Choc Banana Bread Blondies

Serves: 16 squares

Ingredients

  • 2 very ripe bananas, mashed
  • 1/3 cup coconut oil, melted
  • 1/3 cup maple syrup
  • 2 eggs
  • 1 tsp vanilla essence
  • 2 1/2 cup almond flour
  • 1/2 tsp baking powder
  • 1/4 tsp bi carb soda
  • 1 tsp cinnamon
  • choc chips or chocolate, chopped (optional)

Method

  1. Preheat the oven to 180°C and grease and line a 20x20 cm baking tin.
  2. In a bowl, mash the bananas thoroughly with a fork. Mix in the melted coconut oil, maple syrup, eggs, and vanilla essence until well combined.
  3. Add the almond flour, baking powder, bi-carb soda, cinnamon, and chocolate (if using) to the wet ingredients. Stir until a smooth batter forms.
  4. Pour the batter into the prepared tin, sprinkle with extra chocolate if desired, and bake for 20-25 minutes, or until golden and cooked through.
  5. Remove from the oven and allow to cool completely before slicing - it will be soft while warm, so handle carefully.
