Choc Banana Bread Cookies

Serves: 8 cookies

Ingredients

— 2 ripe bananas, mashed

— 2 eggs

— 1/3 cup brown sugar

— 1/3 cup maple syrup

— 1 tsp vanilla essence

— 1 cup almond flour

— 1 1/2 cups plain flour

— 1/4 tsp baking soda

— 1/2 tsp baking powder

— 1 tsp cinnamon

— Pinch of salt

— Chocolate of choice, chopped

Method

  1. Preheat the oven to 180°C and line baking trays with baking paper.
  2. In a large bowl, whisk together the mashed bananas, eggs, brown sugar, maple syrup, and vanilla essence until well combined.
  3. In a separate bowl, combine the almond flour, plain flour, baking soda, baking powder, cinnamon, and salt.
  4. Add the dry ingredients to the wet mixture and gently fold until a soft dough forms. Fold through the chopped chocolate, reserving a little extra for the tops.
  5. Scoop portions of dough onto the prepared trays, leaving space between each cookie. Press a few extra pieces of chocolate onto each one.
  6. Bake for 10-12 minutes, or until the edges are lightly golden while the centres remain soft.
  7. Allow cookies to cool slightly on the tray before serving - best enjoyed warm from the oven!
