Choc Chip Walnut Loaf

Prep time: 30 mins

Cooking time: 45 mins

Serves: 1 loaf (approx. 8-10)

Ingredients

— 6 medjool dates, pitted & softened

— 3/4 cup almond flour

— 3/4 cup self raising flour

— 1/4 baking powder

— 1/4 cup coconut sugar

— 1/2 tsp Cinnamon

— 1/3 cup coconut oil, melted

— 2 banana, mashed

— 1 egg

— 1/2 cup macadamias, chopped (+ reserve some for the top)

Method

  1. Preheat the oven to 180°C and grease and line a 1L loaf tin.

Date puree

  1. Soak the pitted medjool dates in hot water for 10 minutes until softened. 
  2. Once softened, drain the water, then blend into a smooth date purée and set aside.

Cake

  1. In a large bowl, combine the almond flour, self-raising flour, baking powder, coconut sugar, and cinnamon. In a separate bowl, whisk together the mashed bananas, melted coconut oil, date purée, and egg until well combined.
  2. Add the wet ingredients to the dry ingredients and gently mix until a thick, evenly combined batter forms. Fold through the chopped macadamias, reserving a small handful for the top.
  3. Transfer the batter to the prepared tin and sprinkle over the remaining macadamias. Bake for approximately 30 minutes, or until risen, golden, and a skewer inserted into the centre comes out clean.
  4. Allow the loaf to cool in the tin before removing, slicing, and serving.
