Cinnamon Pretzel Bites

Ingredients

— 200g self-raising flour
— 150g yoghurt, plain or vanilla

— 1/2 tsp baking powder
— 2 tsp ground cinnamon
— 1 tbsp maple syrup
— 1 egg, lightly beaten (for egg wash)

Coating
— 2 tbsp maple syrup
— 1 tbsp cinnamon
— 2 tbsp sugar

Method

  1. Preheat the oven to 180°C and line a baking tray with baking paper.
  2. In a large bowl, combine the self-raising flour, yoghurt, baking powder, cinnamon and maple syrup. Mix using a fork until a rough dough begins to form.
  3. Transfer the dough onto a lightly floured surface and gently knead until smooth and fully incorporated. The dough should feel soft and slightly tacky but not sticky. If needed, add a small amount of extra flour, one tablespoon at a time, until workable.
  4. Divide the dough into four equal portions. Roll each portion into a long rope, approximately 2 cm thick, then cut into bite-sized pieces. Repeat with the remaining dough.
  5. Arrange the pretzel bites onto the prepared tray, leaving a little space between each piece to allow for expansion. Brush generously with egg wash to help them bake up golden.
  6. Bake for approximately 15 minutes, or until puffed and lightly golden on the outside. Remove from the oven and allow to cool slightly so they firm up before coating.

Coating

  1. In a large bowl, combine the maple syrup, cinnamon and sugar. Add the warm pretzel bites and gently toss until evenly coated.
  2. Serve warm with extra yoghurt for dipping and enjoy.
