Cookie Dough Banana Bread

Ingredients

Cookie Dough

— Your favourite cookie dough recipe

Banana Bread

— 3 large ripe bananas

— 1/3 cup coconut oil, melted

— 1/2 cup maple syrup

— 1/4 cup milk

— 2 eggs

— 1 tsp vanilla essence

— 1¼ cups almond flour

— ¾ cup self-raising flour

— 1/4 tsp baking powder

Method

  1. Prepare your cookie dough according to your chosen recipe and set aside.
  2. Preheat the oven to 160°C and line a 1L loaf tin with baking paper.
  3. In a large bowl, mash the bananas until smooth. Add the melted coconut oil, maple syrup, milk, eggs, and vanilla essence, whisking until well combined. 
  4. Add the almond flour, self-raising flour, and baking powder, folding gently until just combined - avoid overmixing.
  5. Pour one-third of the batter into the prepared tin and evenly place 4-5 cookie dough balls over the surface. Repeat with another layer of batter followed by more cookie dough balls, then finish with the remaining batter on top.
  6. Bake for 45–55 minutes, or until golden and a skewer inserted into the centre comes out clean. Allow the loaf to cool slightly before slicing. Best enjoyed warm.
