Cookie Dough Crunch Bars

Prep time: 20 mins

Serves: 12 bars

Ingredients

—2 cups rolled oats

—1/2 cup peanut butter

—1/3 cup maple syrup

—1 scoop vanilla protein powder 

—1/4 cup rice cakes or rice puffs

— Choc chips, as many as you like

— 1 cup chocolate, to dip *optional*

Method

  1. In a food processor, blitz the oats, peanut butter, maple syrup, and protein powder until well combined.
  2. Gently fold through the rice puffs and chocolate chips.
  3. Press the mixture firmly into a lined 24x15cm baking dish using your hands or the back of a spoon.
  4. Place in the freezer for at least 30 minutes to set.
  5. Once firm, cut into bars. 
  6. Optional: melt additional chocolate until smooth.
  7. Dip each bar into the chocolate to coat thoroughly and place on a wire rack to set.
