Fairy Bread Loaf

Serves: 1 loaf (approx. 8-10)

Ingredients

Cake

-  1 1/3 cup self raising flour

-  1 1/3 almond flour

-  1/2 tsp baking powder

-  1/3 cup coconut oil, melted

-  1/2 cup maple syrup

-  1 egg

-  2/3 cup milk

-  2 tsp vanilla essence

Frosting

- 125g cream cheese

- 2 tsp Vanilla paste

- 5 tbsp Maple Syrup

- 100’s & 1000’s sprinkles

Method

  1. Preheat your oven to 170°C (fan) and line a 1L loaf tin with baking paper.
  2. In a large bowl, mix together the self-raising flour, almond flour, and baking powder.
  3. In a separate bowl, whisk the melted coconut oil, maple syrup, egg, milk, and vanilla until smooth.
  4. Pour the wet mixture into the dry ingredients and stir until a smooth batter forms.
  5. Transfer the batter to your prepared tin and bake for 40-45 minutes, or until risen, golden, and a skewer comes out clean.
  6. Allow the loaf to cool slightly in the tin before lifting it out and cooling completely.

Frosting

  1. Beat the cream cheese, vanilla paste, and maple syrup until light and fluffy.
  2. Once the loaf is completely cool, spread over the frosting, finish with sprinkles, slice, and enjoy
