Fluffy Pancakes

Serves: approx. 6 medium sized pancakes

Ingredients

— 2/3 cup wholemeal self-raising flour
— 1 tsp cinnamon
— 3 tbsp maple syrup (or honey)
— 1 egg
— 1/3 cup yoghurt
— 1/4 cup milk

Method

  1. In a bowl, whisk together the flour, cinnamon, maple syrup, egg, yoghurt, and milk until a smooth batter forms.
  2. Preheat a non-stick pan over medium heat and lightly spray with cooking spray or brush with oil.
  3. Pour a portion of the batter into the pan to form a pancake of your desired size.
  4. Cook until bubbles form on the surface and the edges start to set, about 2-3 minutes.
  5. Flip the pancake and cook the other side for 2-3 minutes, until golden and cooked through.
  6. Repeat with the remaining batter, adjusting heat if needed to prevent burning.
  7. Serve warm with your favourite fruits, a drizzle of maple syrup, or any topping you love.
