Fudgy Brownie-Stuffed Banana Bread

Serves: 8–10 slices

Ingredients

Banana Bread

  • 3 large ripe bananas
  • 1/3 cup coconut oil, melted
  • 1/2 cup maple syrup
  • 1/4 cup milk
  • 2 eggs
  • 1 tsp vanilla paste
  • 1 1/4 cups almond flour
  • 3/4 cup self-raising flour
  • 1/4 tsp baking powder
  • 2 tsp cinnamon

Brownie

  • 1/4 cup coconut oil
  • 1/2 cup chocolate chips
  • 1/3 cup maple syrup
  • 3/4 cup almond flour
  • 1/3 cup plain flour
  • 2 tbsp cocoa powder
  • 1 egg
  • 1 tsp vanilla essence
  • 1 tsp ground coffee

Method

Banana Bread

  1. Preheat oven to 170°C and grease and line a 1L loaf tin.
  2. Mash bananas in a bowl, then mix in coconut oil, maple syrup, milk, eggs and vanilla until well combined.
  3. Add almond flour, self-raising flour, baking powder and cinnamon. Mix until a smooth batter forms. Set aside.

Brownie

  1. Melt coconut oil and chocolate chips together until smooth.
  2. In a separate bowl, combine almond flour, plain flour, cocoa powder, egg, maple syrup, vanilla and coffee.
  3. Stir in the melted chocolate mixture until smooth and glossy.

Assembly

  1. Pour half of the banana bread batter into the prepared loaf tin.
  2. Add the brownie batter in an even layer, spreading gently to cover.
  3. Top with the remaining banana bread batter and smooth the surface.
  4. Bake for 45–50 minutes, or until golden and a skewer comes out mostly clean. I recommend slightly underbaking it for a soft, gooey centre!
  5. Allow to cool slightly before slicing. Best served warm.
