Funfetti Cookies

Serves: 10 cookies

Ingredients

- 120g butter, room temperature

- 150g brown sugar

- 70g caster sugar

- 1 egg

- 1 tsp vanilla essence

- 320g plain flour

- 1/4 tsp baking powder

- Pinch of salt

- 3/4 cup sprinkles

- White chocolate, roughly chopped (as much as you like)

Method

  1. Preheat the oven to 180°C and line a baking tray with baking paper.
  2. In a large bowl, cream the butter, brown sugar, and caster sugar together until light and smooth. Add the egg and vanilla essence, mixing until fully combined.
  3. Sift in the plain flour, baking powder, and a pinch of salt, and gently mix until just incorporated.
  4. Fold through the sprinkles and roughly chopped white chocolate, ensuring even distribution.
  5. Scoop the dough onto the prepared tray, lightly pressing the tops, and leave enough space between each cookie to allow for spreading.
  6. Bake for 10-12 minutes, until the edges are set and the centres remain soft.
  7. Allow the cookies to cool slightly on the tray before transferring to a wire rack to cool completely.
