Hoisin Pork Noodles

Ingredients
500 g pork mince
1 small onion, chopped
1 garlic clove, crushed
Olive oil
Sauce
¼ cup hoisin sauce
¼ cup dark soy sauce
2 tbsp oyster sauce
2 tbsp sesame oil
1 tbsp honey
1 tbsp cornflour + 1 tbsp water (slurry)
Add-ins
Coleslaw mix
Pak choy, chopped
Spring onion
Noodles of choice
Fresh coriander
Chilli
Sesame seeds

Method
Heat a drizzle of olive oil in a large frying pan or wok over medium-high heat. Add the onion and garlic and cook until soft and fragrant.
Add the pork mince to your pan and cook until browned, breaking it up as it cooks.
In a bowl, whisk together all sauce ingredients until smooth.
Pour the sauce into the pan and toss through the pork until everything is glossy and well coated.
Add the coleslaw mix, pak choy, and spring onion. Stir-fry for a few minutes until slightly softened but still fresh.
Meanwhile, cook your noodles according to packet instructions.
Add the cooked noodles straight into the pan and toss everything together until combined and slightly caramelised.
Serve immediately topped with coriander, chilli, and sesame seeds.
