Honey & Peanut Butter Muesli Bars

Prep time: 20 mins

Serves: 12 bars

Ingredients

—1 cup rolled oats

—1 cup puffed quinoa (can use extra cup of oats if preferred)

—1/4 cup almond flour

—1/2 cup peanut butter (runny is ideal)

—1/4 cup honey

Add ins

—goji berries

—raisins

—peanuts

— choc chips

Method

  1. In a large bowl, combine the oats, puffed quinoa, almond flour, peanut butter, and honey.
  2. Fold through your chosen add-ins- goji berries, raisins, peanuts, and chocolate chips.
  3. Press the mixture firmly into a lined 24x15cm baking dish using your hands or the back of a spoon.
  4. Allow to set until firm, ideally overnight, before cutting into bars.
