Hot Cross Bun Banana Bread

Cooking time: 45 mins

Serves: 1 loaf (approx. 8-10)

Ingredients

— 1 cup dried fruit mix

— 1 cup almond flour

— 1 cup self raising flour

— 1/2 tsp baking powder

— 1/4 cup coconut sugar

— 2 tsp hot cross bun spice mix (or mixed spice)

— 2 ripe bananas, mashed

— 2 eggs

— 1/2 cup maple syrup

— 1/3 cup coconut oil, melted

For the Cross:

— 5 tbsp plain flour

— 3 tbsp water

Method

  1. Place the dried fruit in a bowl, cover with boiling water, and set aside to soften while you prepare the batter.
  2. Preheat the oven to 180°C and grease and line a 1L loaf tin.
  3. In a large bowl, combine the almond flour, self-raising flour, baking powder, coconut sugar, and hot cross bun spice mix. 
  4. In a separate bowl, whisk together the mashed bananas, eggs, maple syrup, and melted coconut oil until smooth.
  5. Pour the wet ingredients into the dry ingredients and mix until a smooth batter forms. Drain the softened fruit well and fold it through the batter.
  6. Transfer the batter to the prepared tin and lightly sprinkle the top with extra spice or cinnamon if desired.

Cross

  1. Mix the plain flour and water together to form a thick paste. Transfer to a piping bag (or snap-lock bag with the corner cut) and pipe a cross over the loaf.
  2. Bake for 40-45 minutes, or until golden and risen.
  3. While still warm, brush the top with maple syrup for a glossy finish. Allow to cool slightly before slicing and serving.
