Hot honey pepperoni Focaccia

Prep time: 20 mins (plus additional for rising time)

Cooking time: 45 mins

Serves: 6-8

Ingredients

Dough
— 450mL warm water
— 8g dry active yeast
— 1 tsp salt
— 1 tsp sugar
— 4 tbsp olive oil (plus extra for drizzling)
— 550g 00 flour

Toppings
— Hot honey sugo
— Pepperoni
— Mozzarella (shredded + fresh)
— Jalapeños (optional)
— Fresh basil
— Honey, to drizzle

Method

1. In a bowl, combine warm water, yeast, sugar and salt. Stir gently and leave for 5–10 minutes until foamy.

2. Add flour to a large bowl. Pour in the yeast mixture and olive oil, then mix until a sticky dough forms.

3. Drizzle a little extra olive oil over the dough. Cover with lightly oiled cling wrap and a tea towel. Leave somewhere warm for 1–2 hours, or until doubled in size.

4. Transfer the risen dough onto a well-oiled deep baking dish. Using your fingertips, gently press and stretch the dough out to the edges.

5. Cover again and allow to rise for another 30–60 minutes while you preheat the oven to 180°C.

6. Spread over the hot honey sugo, then add shredded mozzarella, pepperoni and jalapeños (if using). Bake for 35-40 minutes, or until golden, puffed and cooked through.

7. With 5 minutes remaining, tear over fresh mozzarella and return to the oven until melted.

8. Finish with fresh basil and a generous drizzle of honey. Serve hot and enjoy!
