Matcha & Chocolate Brownies

Ingredients

— 1 cup almond flour

— 2/3 cup plain flour

— 2 eggs

— 1/2 cup maple syrup

— 1 tsp vanilla essence

— 5 tbsp coconut oil, melted

Matcha layer

— 2 tbsp matcha powder

Chocolate layer

— 1 tbsp coconut oil

— 1/3 cup chocolate chips

— 1 tbsp cocoa powder

Method

  1. Preheat the oven to 180°C and line an 8 × 8 inch (20 × 20 cm) baking dish with baking paper.
  2. In a mixing bowl, combine the almond flour, plain flour, eggs, maple syrup, vanilla essence, and melted coconut oil. Mix until a smooth batter forms, then divide the mixture evenly between two bowls.
  3. Matcha layer: Stir the matcha powder into one bowl until fully combined - this will be your green layer.
  4. Chocolate layer: Melt the coconut oil and chocolate chips together until smooth. Stir the melted chocolate mixture and cocoa powder into the second bowl to create the chocolate batter.
  5. Alternate spoonfuls of each batter into the prepared tin, then gently swirl with a skewer or toothpick to create a marbled effect.
  6. Bake for approximately 15-20 minutes, or until lightly golden around the edges and just set in the centre.
  7. Allow to cool slightly before slicing. Finish with melted white chocolate if desired and enjoy.
