My go-to Granola

Cooking time: 20 mins

Serves: approx. 5-6 serves

Ingredients

— 80g coconut oil
— 100ml maple syrup
— 2 cups rolled oats
— Cinnamon (to taste)
— Optional add ins: Pepitas, pecans, almonds, or any nuts/seeds of choice

Method

  1. Preheat the oven to 200°C and line a baking tray with baking paper.
  2. Melt the coconut oil and maple syrup together over low–medium heat until fully combined.
  3. Pour the melted mixture into a large bowl with the rolled oats. Mix well to coat evenly.
  4. Add cinnamon, pepitas, pecans, almonds, or any other nuts, seeds, or dried fruit of your choice and stir to combine.
  5. Spread the mixture evenly on the lined baking tray in a flat layer.
  6. Bake for 15-20 minutes, or until dark golden, rotate the tray halfway for an even bake.
  7. Allow to cool completely, then break up into clusters and store in an airtight container.
