One Pot Spaghetti Soup

Serves: approx. 4-6 people

Ingredients

  • Olive oil, a drizzle
  • 1 garlic clove, minced
  • 500g pork mince
  • 790g tinned chopped tomatoes
  • 1 tbsp tomato paste
  • 3 cups chicken stock
  • Salt, to taste
  • Italian herbs, to taste
  • 500g spaghetti
  • Generous handful shredded mozzarella cheese

Method

  1. Heat a drizzle of olive oil in a large pot over medium heat. Add the garlic and cook for 1-2 minutes, or until fragrant and lightly golden.
  2. Add the pork mince and cook until browned, breaking it apart as it cooks.
  3. Stir through the chopped tomatoes, tomato paste, chicken stock, salt and Italian herbs. Bring the mixture to a gentle boil.
  4. Add the pasta and stir well to combine.
  5. Once the pasta begins to soften, place a lid on the pot and cook for 20–25 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened slightly.
  6. Stir through the shredded mozzarella cheese until melted, glossy and creamy.
  7. Serve hot and enjoy!
