Orange Glazed Vanilla Donuts

Ingredients

Donuts

— 3/4 cup self raising flour

— 3/4 cup almond flour

— 1/3 cup maple syrup

— 4 tbsp coconut oil, melted

— 1/3 cup milk

— 2 tsp vanilla essence

— 1 egg

— zest from one orange (+extra for decoration)

— juice from one orange

Glaze

— 2 cups icing sugar

— 2 tbsp milk

Method

Donuts

  1. Preheat the oven to 180°C and grease a donut tray.
  2. In one bowl, combine the dry ingredients. In a separate bowl, whisk together the wet ingredients, including the orange zest and juice.
  3. Pour the wet mixture into the dry ingredients and mix until a smooth batter forms.
  4. Transfer batter to a piping bag and fill each donut mould about 3/4 full to allow room for rising whilst baking.
  5. Bake for 8-10 minutes, or until the donuts are risen and lightly golden. Allow them to cool completely before removing from the tray.

Glaze

  1. Mix icing sugar and milk together until a thick, smooth glaze forms. 
  2. Dip each donut into the glaze to coat the tops, then finish with a sprinkle of fresh orange zest. Allow the glaze to set before serving.
