PB&J Cake Donuts

Ingredients

— 4 tbsp coconut oil, melted

— 1/2 cup natural peanut butter

— 1/3 cup maple syrup

— 1 cup self raising flour

— 1 cup almond flour

— 2/3 cup milk of choice

— 1 tsp vanilla essence

— 1 egg

Glaze

— 2 cups icing sugar

— 1 tbsp berry jam

— 1 tbsp milk of choice

Method

Donuts

  1. Preheat the oven to 180°C and thoroughly grease two donut trays In a saucepan or microwave-safe bowl, melt together the coconut oil, peanut butter and maple syrup until smooth and lump-free.
  2. In a separate bowl, combine the self-raising flour and almond flour.
  3. Pour the melted mixture into the dry ingredients along with the milk, vanilla and egg. Mix until a smooth batter forms.
  4. Transfer batter to a piping bag (optional) and fill each donut mould about 3/4 full to allow room for rising. 
  5. Bake for 8-10 minutes, rotating the trays halfway, until the donuts are risen and lightly golden. Allow to cool completely before removing from the trays.

Glaze

  1. Whisk together icing sugar, berry jam and milk until a smooth glaze forms. Dip each cooled donut into the glaze and finish with chopped peanuts or a drizzle of extra jam and peanut butter.
