Pistachio & White Chocolate Banana Bread

Cooking time: 45 mins

Serves: 1 loaf (approx. 8-10)

Ingredients

—2 ripe bananas, mashed

—1/3 cup coconut oil, melted

—1/2 cup maple syrup

—2 eggs

—1 tsp vanilla essence

—1 cup almond flour

—1 cup self raising flour

—1/2 tsp baking powder

— 1/3 cup pistachios, chopped

— White chocolate, chopped

—1/3 cup Pistachio spread 

Method

  1. Preheat the oven to 170°C and line a 1L loaf tin with baking paper.
  2. Mash the bananas in a large bowl, then mix in the remaining wet ingredients. Add the dry ingredients and stir until just combined. Fold through the chopped pistachios and white chocolate.
  3. Pour half the batter into the prepared tin. Spread over a layer of pistachio cream, then top with the remaining batter. Finish with extra pistachios and white chocolate.
  4. Bake for 40-45 minutes, or until risen, golden, and a skewer inserted comes out clean.
  5. Allow to cool before removing from the tin. Drizzle with a simple icing sugar glaze and enjoy!
