6 medjool dates, softened in hot water for 10 mins
2 1/2 cup rolled oats, blended into oat flour
1/2 cup almond flour
1/2 cup desiccated coconut
1/3 cup maple syrup
1 lemon, zest + juice
1/2 cup white chocolate, to drizzle

Method
Begin by softening the dates: place them in a small bowl of hot water for 10 minutes. Once soft, drain and set aside.
Blitz the rolled oats in a food processor until they reach a fine flour-like consistency.
Add the almond flour, desiccated coconut, maple syrup, lemon zest, lemon juice, and the softened dates to the food processor. Blitz again until all ingredients are fully combined, forming a sticky, pliable mixture.
Line a small baking dish with baking paper and transfer the mixture into it. Use the back of a spoon or your hands to press the mixture down firmly and evenly.
Place the dish in the fridge for at least 2 hours, or until the slice has firmed up.
Once set, melt the white chocolate and drizzle it over the top. Finish with a light sprinkling of extra desiccated coconut.
Slice into squares or bars and enjoy! Store any leftovers in the fridge.
