Self saucing chocolate pudding

Serves: 1 large pudding (approx. 8-10 serves)

Ingredients

Pudding

— 3/4 cup milk chocolate
— 1/4 cup coconut oil
— 1 cup almond flour
— 1/2 tsp baking powder
— 1/3 cup plain flour
— 2 tbsp cocoa powder
— 1/3 cup maple syrup
— 1/3 cup milk
— 1 egg
— 1 tsp coffee, dissolved in water

Topping:
— 2 tbsp cocoa powder
— 2 tbsp coconut sugar
— ½ cup hot water

Method

  1. Preheat the oven to 180°C and thoroughly grease a baking dish (approx. 24 x 15 cm).
  2. Melt the chocolate and coconut oil together until smooth. Set aside.
  3. In a bowl, combine all remaining pudding ingredients, then stir through the melted chocolate to form a batter. 
  4. In a separate small bowl, mix together the cocoa powder and coconut sugar for the topping.
  5. Pour the batter into the prepared dish and sprinkle the cocoa-sugar mixture evenly over the top.
  6. Carefully pour hot water over the back of a spoon all over the surface of the pudding.
  7. Bake for 15-20 minutes (longer if you prefer a less gooey texture). The edges should be set, while the centre can remain slightly jiggly.
  8. Remove from the oven carefully and serve warm with ice cream.
