Speckled Egg Blondie Bars

Serves: 16 squares

Ingredients

— 1/2 cup coconut oil, melted

— 1/4 cup coconut sugar (or brown sugar)

— 1/2 cup maple syrup

— 2 eggs

— 1 tsp vanilla essence

— 1 cup almond flour

— 1 cup plain flour

— 1 packet Speckled eggs (100g)

— desired amount Choc chips (white & milk, optional)

Method

  1. Preheat the oven to 170°C and line a 20 x 20cm baking tin with baking paper.
  2. In a bowl, whisk together the coconut oil, coconut sugar, maple syrup, eggs and vanilla.
  3. Add the almond flour and plain flour, then fold through the speckled eggs and chocolate chips until a batter forms.
  4. Pour the batter into your lined tin and spread evenly.
  5. Bake for approx 15-20 minutes, or until slightly golden on top. Test with a toothpick- it should come out moist but without wet batter.
  6. Remove from the oven and allow to cool before slicing, or enjoy while warm.
