Spiced Chai Banana Bread

Cooking time: 45 mins

Serves: 1 loaf (approx. 8-10)

Ingredients
— 1 cup almond flour
— 1 cup self raising flour
— 1/2 tsp baking powder
— 1/4 cup coconut sugar
— 2 tsp chai mix powder
— 3 ripe bananas, reserve one for the top
— 2 eggs
— 1/3 cup maple syrup
— 1/3 cup coconut oil, melted
— 1 tsp vanilla essence
Chai swirl
— 2 tbsp chai mix powder
— 1 tsp cinnamon
— 3 tbsp water

Method

Chai Swirl

  1. Mix chai powder, cinnamon, and water in a small bowl until smooth. Set aside

Banana Bread

  1. Preheat the oven to 160°C and grease and line a 1L loaf tin with baking paper.
  2. In a large bowl, combine all dry ingredients. In a separate bowl, mash the bananas, then mix in the remaining wet ingredients. 
  3. Add the wet mixture to the dry ingredients and stir until just combined.
  4. Pour half the batter into the prepared tin, then spoon over the chai swirl mixture. Use a toothpick or skewer to gently marble through the batter. Top with the remaining batter and place the extra sliced banana on top.
  5. Bake for approximately 40-45 minutes, or until risen, golden, and a skewer inserted comes out clean. 
  6. Allow to cool slightly before slicing, or enjoy warm.
