Spinach and Parmesan tortilla cups

Serves: 10

Ingredients

  • 150 g loose spinach
  • ⅔ cup plain yoghurt
  • 4 eggs
  • ½ cup shredded mozzarella, plus extra for topping
  • ⅓ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 10 small tortilla wraps

Method

  1. Preheat the oven to 180°C and lightly grease a muffin tray.
  2. In a large bowl, combine the spinach, yoghurt, eggs, mozzarella, Parmesan, garlic powder, paprika, salt and pepper. Mix well until fully combined. Set aside.
  3. Cut the tortillas into smaller circles (approximately 7 cm wide, or large enough to fit your muffin tray). Press each tortilla piece into the muffin holes to form cups.
  4. Spoon the spinach filling evenly into each tortilla cup. Top with a little extra mozzarella cheese.
  5. Bake for 20-25 minutes, or until the tops are golden and the filling is set and cooked through.
  6. Remove from the oven and allow the cups to cool slightly before carefully removing them from the tray.
