Veggie & Mozzarella Fritters

Cooking time: 15 mins

Serves: 10-12 fritters

Ingredients

  • 1 zucchini, grated
  • 1 carrot, grated
  • 2 cups frozen vegetables of choice (corn, peas, beans or mixed vegetables)
  • Handful of spring onion, chopped
  • ¾ cup self-raising flour
  • ½ tsp baking powder
  • Handful of shredded mozzarella cheese
  • ½ tsp ground spices of choice (curry powder, garlic powder, onion powder, paprika, mint or dill)
  • 3 eggs
  • ¼ cup milk
  • Olive oil, for cooking

Method

  1. Grate the zucchini and carrot into a large mixing bowl. Add the frozen vegetables and chopped spring onion.
  2. Add the flour, baking powder, mozzarella, spices, eggs and milk. Mix until a thick batter forms and all ingredients are evenly combined.
  3. Heat a drizzle of olive oil in a large non-stick frying pan over medium heat.
  4. Scoop even portions of the mixture into the pan, gently flattening each fritter with the back of a spoon.
  5. Cook for 3-4 minutes per side, or until golden brown and cooked through. Repeat with the remaining batter, adding more oil as needed.
  6. Serve warm with Greek yoghurt, fresh mint and a squeeze of lemon.
