White Choc & Pistachio Biscotti

Serves: 20-25 biscuits

Ingredients

—1 1/2 cup almond flour

—1 cup plain flour

—1/4 cup caster sugar

—1/2 tsp baking powder

—2 eggs

—1/2 cup honey

— 1/3 cup white choc chips, extra for drizzle

— 1/3 cup pistachios, plus extra to sprinkle

Method

  1. Preheat the oven to 180°C and line a baking tray with baking paper.
  2. In a bowl, combine the almond flour, plain flour, caster sugar, and baking powder.
  3. Add the eggs and honey to the dry ingredients and mix until a dough forms. Fold through the white chocolate chips and pistachios.
  4. Shape the dough into a large log (or two smaller logs) on the lined tray using lightly floured hands.
  5. Bake for 20-25 minutes, until golden around the edges. Remove from the oven and let it cool completely.
  6. Once cooled, slice the log diagonally into 1 cm thick pieces. Arrange the slices face up on the tray and bake at 150°C for 20-30 minutes, flipping halfway through, until crisp and golden.
  7. Remove from the oven, allow to cool completely, then drizzle with melted white chocolate and sprinkle with extra chopped pistachios.
